Simple food- My Moms Banana Bread

Simple Life- My Moms Banana Bread

Um, yum?
I grew up on this stuff. And I'm so happy that my kids can now have a piece of my mom with them, to share with their kids, should God bless them with children.
I have changed this recipe, and the way it is made, slightly. I can not help tweaking recipes. Sometimes it works, sometimes it takes several do-overs to get it right. So this is the tweaked version.
There are different options when making this. Make it bread with crunchy brown sugar for a sweet breakfast treat, make muffins with cream cheese frosting for a dessert for your bible study group, make it a cake with the same delish frosting with strawberry garnish for a special gourmet birthday cake!!!! No matter how you make it and when you serve it, people will beg you for more!!!!

Ingredients:
3 large bananas
1/4 cup sour milk(see my Never Buy it Again Sour Milk post)
2 eggs
1 t baking powder
small t baking soda
1 1/4 cup sugar or honey
1/.2 t salt or less if you desire
2 cups white flour or 1 3/4 cup almond flour
1/2 t pure vanilla, more if you desire
1 stick butter
1 large T cinnamon
Optional:
brown sugar(Never Buy it Again)
cream cheese frosting(separate post)
crushed candied nuts(separate post)
cinnamon/sugar(Never Buy it Again)

Recipe:
set oven to 350
Prepare your pan or muffin tin by spraying with cooking spray or rubbing with oil. Muffin tins work well if you are making muffins. If you are making a cake or bread you will need to flour your pans.
Put bananas and sugar in a bowl and use an electric mixer or your standing mixer to beat together. It should be lumpy but there should be no whole pieces of bananas visible. My mom loves to just crush her bananas with a fork so that there are pieces of bananas in her bread. Some people like this, it is good either way so you decide :-). I'll continue with the mixer version.
Sour your milk and soften-melt your butter. Throw all your other ingredients in with the bananas and mix with mixer. Add your butter, mix. Add your milk, mix.
Put all that yumminess into the pan you plan on using. If you desire some crunchiness and love nuts crush some candied nuts and sprinkle on top at this point. If you love crunchiness but hate nuts sprinkle a handful of brown sugar on top. If you don't like crunchiness and want to add some extra delicious calories, take a few teaspoons of cinnamon and sugar mixture and sprinkle it on top.

If you are making muffins or a layer cake, bake for about 30 min. If you are making a loaf of bread bake for an hour. The center should round up and it should spring back when you touch it. Be careful wiggling around the cake or bread before it is completely finished, it will collapse and wont rise up again.
Remove cake, muffins, etc from oven and let sit about 5 minutes. Then carefully, without getting burned, take them out of their pans and put them on a cooling rack. Wait until cooled(or don't because you just can't wait- but don't burn yourself!!!), frost or leave alone, and munch!!!

Cake Tips

If you want to make a lovely cake run a knife around the edges of your pans, turn your cake out onto a towel on your hand or a plate, then flip it back over so the rounded side is up, on the cooling rack. Let them sit until completely cooled. Make 2 recipes of your cream cheese frosting while they cool but let it sit out so it is soft enough to use when your cake is done cooling.
Put a dollop of frosting on your cake platter or a flat plate, whatever you are using for your base. Smooth it out and place your cake, rounded side up, on the frosting. Make sure it is stuck down. You can flatten the top on your cake by cutting off the rounded part but I find this unnecessary and rarely do it. Put a larger dollop of frosting on the top of the first cake. Spread gently til its about 3/4 inch from the edge. Set the other cake on top. Again, you can flatter the top if desired. Put 3 large spoonfuls of frosting on the top of your cake and smooth over the edges and down the sides of your cake. This takes time and it will probably take you quite a few times to get it looking perfect. You can youtube frosting a cake and probably come up with some great tips.
